Need a solution for my cats food allergies.

I'm feeling really stressed and I'm hoping for some advice on my cat's food allergies. My poor kitty, Mr. Whiskers, has been having a tough time with constant scratching and some pretty nasty skin rashes. We've been to the vet, and they suggested it might be a food allergy. I’ve tried switching his food to a "hypoallergenic" brand, but nothing seems to be helping. He’s a 7-year-old tabby and I've always been really careful about what he eats, so this is breaking my heart. Has anyone else had experience with this? I’m desperate for any suggestions on specific brands or homemade recipes that might help ease his symptoms. Thanks so much. Any advice would be appreciated more than you know!
